Where do I change settings for the header top right (Currency/Language) Menu?

I’ve spent two hours looking through all settings and I can’t seem to find where I can change options for the Currency/Language menu on the Top Right Header. Please let me know how I can either change these settings, or get rid of the menu all together. I was hoping to have my site available for 2 separate languages.
